eggplantGrilled Eggplant Recipe – Grilled Eggplant with a little bit of virgin olive oil and some oregano for flavor will please even the fusiest of eaters. I find the grill lines on the eggplant makes the presentation even better.

Ingredients to make Grilled Eggplant Recipe

1 1eggplant
1/2 1/2tsp tsp(2 mL) (2 mL) salt
1/4 1/4cup cup(50 mL) (50 mL) extra-virgin olive oil
2 2tsp tsp(10 mL) (10 mL) balsamic vinegar
1/2 1/2tsp tsp(2 mL) (2 mL) dried oregano
1 1pinch pinchsalt
1 1pinch pinchpepper

Directions to make Grilled Eggplant Recipe

Step 1:

Cut eggplant into 1/2-inch (1 cm) thick slices; sprinkle with salt. Let stand in colander until moisture seeps out, about 10 minutes. Pat dry with paper towel.

Step 2:

Whisk together olive oil, balsamic vinegar, oregano, salt and pepper. Brush half over eggplant. Place on greased grill over medium heat; close lid and grill, turning once and brushing with remaining oil mixture, until tender, about 10 minutes
